What did you eat today?

What did I eat today?  Had an amazing day of food.  The Korma and Chili was made in bulk yesterday and the day before so I don't have to cook for the rest of the week.

Breakfast
Chocolate Blueberry Smoothie

  • 2 Cups Frozen Blueberries
  • 3/4 Cup Soy Milk
  • 1 Banana
  • 1 Tablespoon Flax Seed
  • 2 Tablespoons Unsweetened Natural Cocao powder
  • 4 oz Baby Spinach


Lunch
Cashew Vegetable Korma - VERY DELICIOUS
(carrots, broccoli, onions, cashews, golden potatoes, coconut milk, homemade veggie broth) modified NO SALT! Not even in then broth.  recipe from The Post Punk Kitchen

Large Salad

  • 3 oz Mixed Greens
  • Carrots, Red Onions, Yellow Pepper
  • Fresh squeezed lime juice with splash of balsamic vinegar


Handful of steamed green beans





Dinner
Easy Three Bean Vegetable Chili (from Eat to Live) - VERY DELICIOUS

Large Salad

  • 3 oz Mixed Greens
  • Dried cranberries
  • Slivered Almonds
  • Creamy Blueberry dressing from Eat to Live modified: 
    • 2 cups frozen blueberries
    • 1/2 Orange Juice
    • 3 Tablespoons Apple cider vinegar


Handful of steamed green beans


Dessert
Strawberry Lemon Sorbet

  1. Question about salt. Now that you aren't on the ETL 6-week, what are you doing there? Are you considering small bits of sea salt in moderation?

  2. I am eliminating added salt from my diet long term. I just re-read page 305-306 about salt and how any excess salt added to food (outside of what is contained in natural foods) is likely to increase disease.

    My taste buds have adjusted for sure.

    Dr. Fuhrman does say that if you must add salt, only add it when the food is at the table right before you eat it because you will taste the salt more. When you cook with salt, you hardly taste it.
